In the past year, we have gone from occassionally buying feta at the grocery store… to buying a large container at Costco… to buying the huge blocks at Costco and crumbling it ourselves. It’s now a staple at our house. It goes on pizza, in salad, on pasta, and on sandwiches. My son even tried it on crepes and declared it delicious with fresh strawberry jam. I was disappointed, for some unknown reason, to learn that American feta is made from cow’s milk. That doesn’t diminish my love of feta.
Every time I oull our container of crumbled feta out of the fridge, little voices pipe up, “Can I try some?” I laugh and smile, as though they have never had it before. Everything is beta with feta.
