five minute bread…

I’ve been making this bread dough since last January. It’s amazing. I always have some in the fridge. If it’s dinner time and we want pizza, stromboli, Italian monkey bread, rolls, or whatever, I have some dough ready. You honestly cannot mess it up. I pretty much dump all of the ingredients in my Kitchen-Aid mixer and mix together. For the first rise before I stick it in the refrigerator, I generally let it go about 5 hours. That just happens to be the amount of time it goes when I get busy with life. The dough often does not get a second rise time after we pull it out. I have some impatient dough users in my household. The food still comes out fabulously.

Dough:

3 cups warm water

1 1/2 Tablespoons yeast

2 teaspoons salt

1 1/2 Tablespoons apple cider vinegar

6 1/2 cups of flour (in whatever combination you like)

Bake at 450 degrees. Time varies on what you are making, but 15-20 minutes seems to cover most things.

There are many similar recipes out there, such as the Fantastic Fearless Five-Minute Bread or Artisan Bread in Five Minutes a Day. I actually ordered Artisan Bread in Five Minutes a Day for my husband or father’s day.  The result was my husband carrying the book around for a week, completely absorbed in the subtle nuiances of different types of bread. I’ve been trying to limit baking this summer, but as soon as the weather is nice and chilly, I want to try more out.
