For my daughter’s birthday, she requested a lemon cheesecake that looked like it was a basket of berries that she had just picked. My husband is the cheesecake baker in the family, so I handed that portion off to him. I had never made fondant before, but it seemed like the most plausible way to form the basket portion. It turns out that marshmallow fondant is amazingly easy, and extremely sticky, to make. After rolling it out, I cut and weaved it into a basket design. Some chocolate frosting helped it adhere to the cheesecake. My daughter placed blackberries, raspberries, and blueberries over the top, declaring it the best birthday cake ever.
